We designed the hotel around the light, the cliffs, and the way the mistral moves. The building is a lens, not a barrier.

Sourced within forty kilometres
The kitchen works with seven local producers. The wine list is Provence, entirely. Pleasure without the airmiles.

01 — On the water
Sail at dawn
A 36-foot ketch, a small crew, and the Esterel cliffs catching the first light. Back by ten for breakfast.

Private dinner on the cliff terrace. Chef Isabelle Moreau cooks to whatever the market brought that morning. Eight courses, three producers.

The thermal circuit follows the old Roman spring. Sea-mineral wraps, a silent pool, and no timetable whatsoever.

The kitchen has its own fishing boat
Chef Isabelle Moreau grew up fishing the Esterel coast with her father. She returned at thirty-two to cook the things she missed: sea urchin with local butter, grilled daurade, tomatoes from the cliff garden.
The dining room is open to residents and four outside tables, booked months in advance. Lunch is simple. Dinner is not.
